Raspberry Buttermilk Muffins

2 cups whole wheat flour

1/2 cup  
unrefined organic sugar
2 tsp
  baking powder
1 tsp
  salt
6 tbsp
  butter
1
  egg (beaten)
1 cup
  buttermilk
1 cup
  raspberry (fresh)


Directions

  1. Combine flour, sugar, baking powder and salt.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Add egg and buttermilk; mix just until dry ingredients are moistened.
  4. Fold in berries.
  5. Fill greased or paper-lined muffin cups two-thirds full.
  6. Bake at 400ºfor 20 minutes or until browned.

Gardenburger® Sun-Dried Tomato Basil
This is a very easy and fast recipe and it fills 2 people and possibly one toddler. All food is organic. The costs are just about $6 total. not bad, huh?


4 patties Gardenburger® Sun-Dried Tomato Basil ($3.00)
cheese ($1.25)
green onions ($.30)
tomato ($.65)
bread ($.50)
ketchup (or any dressing)

Garden burger patties have to be fried in a pan. A little olive oil just to heat up the pan and fry for 6 min. or as much needed on both sides. Put cheese on top for nice melt. Decorate with yummy organic veggies and enjoy!

Gardenburger® Sun-Dried Tomato Basil

Broccoli/kohlrabi rösti
Serves 4-6 as a side dish, 2-3 as a light lunch with salad

1/2 kohlrabi (about 100 g)
50 g chickpea flour
A handful of parsley, stems and leaves
1 egg
2 tbsp cold water
1 tsp sea salt
1 tsp cracked black peppercorns
Good quality olive oil, for frying


Cut the broccoli  peel the kohlrabi. Shred broccoli by hand or using the grating attachment of your food processor. If using the food processor, replace the shredding blade with the chopping blade. Add the chickpea flour, thinly sliced parsley leaves and stems, beaten egg, water, and seasonings. Process, in brief bursts, until the contents are fairly evenly mixed. By hand, simply mix well.
Heat a good tablespoon of oil in a non-stick frying pan over medium-high heat. Drop tablespoons of this mixture into the hot oil and cook for 2-3 mins on each side, until browned and cooked through.
